The Lotus Restaurant is a sea breeze, open air restaurant located beside the infinity pool at the luxury boutique resort of Xbalanque.


Offering amazing views of the sunset & delightful cuisine created by the private chef, Josue Romero, every dish is prepared with great passion and energy. They feature local foods with an artistic, modern twist. They also serve only the freshest seafood.

The bartenders, Clinton and Randy, serve you with a smile and make the best drinks on the island.

Xbalanque is quickly becoming a “foodie destination” because of their artistic, delicious fare and of course the view!


I would post a picture of their menus, but because the food is prepared seasonally to use the freshest local fish, fruit and produce you would have to check out their website for that. The speciality among Chef Josue is definitely his dessert. He makes anything your heart desires!

FYI: They actually grow much of their own produce. They have a farm on Roatan located at Brasil Hill, and they now grow and roast our own coffee beans. #CoffeeLoversUnite


Their bar offers a good selection of wine and champagne. So for all of you wine-o’s and champagne’ies you will have something to sip on as well.

Xbalanque is pronounced: X-bal-ank

Riding down the winded road of Tamarind Drive, I pull up to this magnificent looking hacienda styled tropical resort. Greeted with a warm friendly smile from the sweetest concierge ever, Genesis, I knew I was in the right place. Nestled in between West Bay and West End, Xbalanque is a modern fusion of untamed luxury.

Xbalanque is surrounded by lush natural jungle providing guests with a private beach and pier, it is pure tranquility at its best. If you don’t believe me, the sunset says it all.


The modern decor and high-end furnishings provide pampering accommodations to all guest. The interior designer and owner, Patsy Bracy, sets the bar for boutique luxury on the island of Roatan, especially in the Caribbean.

The resort comes complete with an on-site restaurant and bar. The bartenders, Clinton and Randy, along with Chef Josue helps make your stay much more remarkable by serving up the best dishes and drinks on the island. They also have a second floor lounge allowing splendid sunset views.

The rooms are magnificently designed with tasteful, modern decor. They offer a cooking and seating area with tall ceilings, one of the most comfortable beds you could sleep on and a spacious shower.

This is a quiet gem on the island of Roatan. It offers great snorkeling, paddle boarding and kayaking for guest who love adventure. If you want the liveliness of the other major resorts, it is walking distance on the beach. The resort is family friendly, and very exceptional. The staff greet you by first name and always have amazing stories to tell. Staying at Xbalanque you will find that it is unparalleled to anything you have ever experienced and you will fall in love, literally.

Snorkeling Roatan

If you’re one of the lucky millions who doesn’t have their scuba license, visiting a scuba happy island such as Roatan still can be in your future! I don’t have a scuba license, although I am working  on it, but I still get to enjoy the magnificence of the gorgeous coral reefs by snorkeling.

I love snorkeling in the Caribbean Sea because of the vividness of the water and reef, along with the abundance of aquatic animals you get to see.

Roatan offers an exquisite experience, varying from the colorful fish, squids, nurse sharks, and coral.

The colorful fish and aquatic plants allow you to have a gorgeous view unlike no other.

Many resorts rent you snorkeling gear or they offer it for free, but you can also take an inexpensive snorkeling tour that is amazing as well. They show you many more reefs than the ones near the shore.
