Well, in a healthy eating crazy procrastination kind of way….
I am heading to the Four Seasons, Punta Mita, Nays, Mexico this weekend and I need to get in shape. I don’t mean starve myself to the extreme to lose a measly 5 pounds for an “Itsy Bitsy Tini Bikini,” but eating healthy, drinking water and exercising should help, right? Determination is key if you want to look good in a short amount of time. I’m going to take you step by step with my diet, exercise, and all.

I am using a 7 day (crazy) meal plan I’ve concocted for torture, and a good STRICT exercise to get my body in decent shape for my “Mexican Getaway” weekend. Is it too much to ask for fried food and abs? Hope you enjoy, because I didn’t.
My 7 day beach workout plan consist of:
- 30 crunches
- 30 reverse crunches
- 30 bicycles
- 30 leg raises
- 30 second plank hold
- 30 minute walk/jog/run
- 300 squats with Dumbbells
Day 1: My breakfast was a Banana Spice smoothie, yum. This delicious healthy banana smoothie is made with vanilla kefir and spiked with warming spices. I ran, well briskly walked until I was out of breath, for two miles. I can feel the abs coming on. My “after death” workout snack was 1 slice whole-wheat bread spread with 2 Tbsp. Part-skim ricotta, topped with 1 chopped dried fig and 1 tsp. Honey. I ran my errands for the day and brought my lunch with me. For some reason they call this a “Power salad,” it was just a tease to me. But, any way you toss 2 cups lettuce, 1 cup chopped raw vegetables, 1 hard-boiled egg, 2 Tbsp. Raisins and 2 Tbsp. Almonds with 2 Tbsp. Low-fat balsamic dressing. I had my snack while I was riding my bike on the beach path; I actually had my snack twice in fact, only because I could eat a McDonald’s whole after all of this food teasing. It contained, 1 small apple (I picked the biggest one) and only 22 pistachios! What kind of crap is this, I can’t wait for the Mexican food! I got home, and did my dinner made me laugh, but it is for my beach body, I can do this. I had a Quinoa bowl–Stir-fry 1/2 cup diced extra-firm tofu and 1 cup diced broccoli & carrots in 2 tsp. Canola oil. Stir in 1/2 tsp. Sesame oil & 2 tsp. Soy sauce. Serve over 1 cup cooked quinoa and top with 1 Tbsp. of peanuts.
Day 2: I couldn’t do the “smoothie for breakfast” fad again, so I opted for a good fresh fruit bowl. I am feeling extra fruity today, so everything I’m going to eat will be fruit based. I made a fruit bowl for breakfast with delicious strawberries, blueberries and pineapples, and I freshly squeezed the best orange juice ever. It is a gorgeous day, so instead of jogging around a golf course like a hamster, I am going to run down by the beach. I always carry my State Backpack with me when I am going to the beach, because it is so easy to throw on my back and run. I brought mango slices for my “before lunch snack.” I got them at the farmers market as well. I went to a Vegan restaurant called M Cafe de Chaya, for lunch. They offer a meat free and dairy free macrobiotic menu. How amazing does that sound? It was actually really delicious. I ordered the M Cafe Macro Meal, which is heirloom brown rice with steamed seasonal vegetables, kale & adzuki beans, hijiki seaweed, house made pickles & carrots. Honestly, that kept me full until dinner. For dinner, I made Mediterranean Baked Sweet Potatoes. Not to toot my own horn, but they were amazing!
Day 3: I’m already over this eating healthy and working out stuff, when will it grow on me. My breakfast was an egg sandwich. I scrambled 1 egg in with 1 tsp of So Delicious butter and layered it on 2 slices of whole-grain toast topped with fresh tomato slices & 1/4 freshly sliced avocado. Today is a busy day for me. I have a ton of errands to run, so I brought a big bottle of water with me (that I infused with strawberries and blueberries, yum) and a Granny Smith Apple for my snack. I was so busy with errands that I didn’t have lunch. Truthfully, that isn’t a good thing, but I’m not going to tell you I did when I didn’t. I got home around 2:30 after all of the running around. I made a basil and tomato salad with fig balsamic vinaigrette from my favorite winery. I diced up two whole tomatoes and tossed it in a bowl with basil and the fig balsamic. I took a long nap before waking up for dinner. I made a brown rice bowl with lean chicken and broccoli added in. It was awesome!
Day 4: I need a real breakfast in my life, so today I had steel-cut oatmeal and black coffee, yes I said BLACK COFFEE. I have two HUGE meetings today with important people, hopefully they go well. One is taking me to lunch and the other for drinks I must have will power and order a good healthy meal. The lunch person took me to my favorite restaurant ever, The Ivy! They won my heart. I ordered a Caesar salad and drooled over the pasta that they ordered, darn diet. The next one took me to Shutters, my favorite tea and cocktail place. I got home around 7 and made dinner. My dinner was Curried Coconut Quinoa Greens Roasted Cauliflower.
Day 5: I woke up later than usual today. I made a strawberry banana smoothie for my late start breakfast. I always have to eat breakfast or my day would be horrific. I’ve been working on my computer all day, and trying to figure out what I want to do while I am on my trip. I made a lean chicken sandwich on whole wheat with avocado, basil and tomato for lunch. It was amazing! I had pistachios and an apple for my before dinner snack. As I was working through the afternoon, I found a good dinner recipe online for 30 minute Coconut Curry.
Day 6: One more day, I can do this, just one more day! I woke up this morning, made a fruit bowl and went jogging around the golf course. I only have one more day of this diet, and it is really working well for me. My energy has boosted immensely! Healthy eating and regular exercise aren’t so bad after all, I don’t guess. When I got back to my house, I walked into town for my weekly reflexology appointment at Massage Place. As I was leaving, I walked by the supermarket and picked up mangos, strawberries, and blueberries for a snack. I’m usually not hungry after getting reflexology. I got my list finished off of what I want to do while I’m in Punta Mita this weekend. My dinner was Vegetarian Bean Chili that I stumbled across the previous afternoon. I guess it was meant to be, some form of regular food came into my life!
Day 7: LAST DAY, THANK GOODNESS! I lost 7 pounds along with my appetite for healthy eating. I can’t wait to dig into authentic Mexican cuisine and gain it all back! Well, I like being able to see my abs, so I’ll just hold off on binge eating for now. Today, I’m running around crazy getting stuff together for my trip. My breakfast was avocado toast with diced tomatoes and freshly squeezed grapefruit juice. I’m a sucker for procrastination, so today I’m packing. I haven’t had much time to stop and relax today, so I quickly grabbed a huge smoothie from Jamba Juice. For some reason, they always fill me up. I’ve been running around Beverly Hills like a retard trying to get my life together, and it is working somewhat. I need (want) a huge hat so I can block the sun in style! I finally made it home about an hour ago and was STARVING! I made Carrot Soup from some yummy carrots I got from the farmers market Sunday, and I’m currently eating that as I type….
